Aloha...

Hawaiian cuisine is much more than a Canadian bacon and pineapple-topped pizza. Its proximity to East Asia has a great influence on the cuisine of the region. For instance, Japanese tonkatsu and teriyaki with rice are common, though the former is more often prepared with chicken rather than pork and called chicken katsu. Additionally, Hawaii’s saimin noodles are derivative of Japanese udon noodles, although the name is a compound of two Chinese words. Mainland U.S. influences include the hamburger for loco moco, a hamburger patty served with gravy and fried sunny-side up egg over rice, and Spam, introduced to the island by servicemen during World War II, which is used in many dishes including Spam musubi. An additional Hawaiian favorite is kalua pork.
